The Dirty Couch Brewing program is based in wild ales brought to life through the use of specialty yeasts, produce, and process. Our standard for uniqueness in our brews, alongside our use of locally sourced ingredients, lends a distinctive quality to the form and finish of each DCB brew.
And many DCB offerings employ the tradition of aging beers in oak barrels. Our selection of aged ales are housed in used whiskey and wine barrels for six to twenty-four months, and paired with Pacific Northwest fruits and spices depending on the desired profile of the brew.
Beautifully, all DCB brews are intentionally unintentional given the variability in DCB-selected produce, our brewing process, and the distinctive qualities of the brettanomyces and flavor personalities of the barrels themselves.
